A delicious upgrade from store-bought cereals! Bursting with nuts and seeds, gluten, dairy and refined sugar free - to keep you balanced and full for longer.
Prep 10 mins / Cook 20 mins / Makes 6-8 serves
1½ cups buckwheat groats
1 cup raw almonds (chopped)
½ cup walnuts (chopped)
½ cup pumpkin seeds
2 tbsp cacao or cocoa powder
2 tbsp chia seeds
2 tbsp sesame seeds
1 tbsp cacao nibs
1 tsp ground ginger
1 tsp cinnamon
½ tsp cardamom
¼ tsp salt

2 tbsp coconut oil
2 tbsp almond butter
2 tbsp yacón syrup
Preheat oven to 200°C.
Mix all dry ingredients in a large bowl.
Melt coconut oil + almond butter, then stir in yacón syrup.
Pour wet into dry and mix until sticky & chocolatey.
Press firmly into a baking paper lined tin (1cm thick) and bake for 20 mins.
Cool completely, chill in fridge to harden, then break into chunks.
Enjoy with your favourite milk or yoghurt and fruit!
