MEXICAN BLACK BEANS

Beans are a fantastic way to enjoy carbohydrates - full of fibre, flavour, and nourishment - especially after a week of festive feasting!

Prep 5 mins / Cook 30 mins / Serves 4-6

½ white onion, finely diced
2 cloves garlic, finely diced
1 tbsp Mexican Spice Mix (see below)
½ tsp salt & black pepper to taste
400g tin black beans (drained)
¾ cup water
½ cup Passata (tomato puree)
2 tbsp oil of choice

Heat oil in a medium pot & sauté onion + garlic for 5 mins until soft + fragrant.
Add black beans, water, Passata, spice mix, and salt.
Cover and simmer for 25 mins, stirring occasionally.

Serve as a side or filling in tacos, burritos salads or rice bowls!

To make your Mexican spice mix (mild), mix together:

1 tbsp dried thyme (ground)
1 tbsp ground coriander
2 tbsp ground cumin
2 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp black pepper
½ tsp salt

Store in an airtight container for later!
