ZUCCHINI WRAPS

My garden is full of zucchinis and these quick-and-easy wraps are a delicious, gluten-, dairy- & refined sugar-free alternative to store-bought!

Prep 10 mins / Cook 25 mins / Makes 4

2 small or 1 large zucchini, grated
1/2 tsp salt
1 large egg, beaten
1/4 tsp ground cumin
1 1/2 tbsp rice or soy flour
1tbsp Italian parsley, chopped

Preheat oven to 200 degrees celcius.

Sprinkle grated zucchini with salt, toss & place in a sieve for 5-10 mins. Then press to remove excess liquid.

Mix together the rest of the ingredients, then add zucchini.

Scoop about 1/2 cup of mixture onto a paper-lined oven tray, pressing down to form a thin circle about 10cm in diameter.

Bake for 25 mins or until the wraps look crisp and golden at the edges.

Allow to cool for 10 mins and then peel off the baking paper.

Top with your choice of filling or as a tasty side to salad or soup!
